Summer Veggie Skewers

Savour the taste of summer with our seasonal veggie skewers. Bursting with colour and flavour, these skewers are a hit for any outdoor gathering.

What You’ll Need

  • Cherry tomatoes
  • Courgette, sliced into rounds
  • Assorted capsicum, cut into chunks
  • Red onion, quartered
  • Button mushrooms
  • Olive oil (3 tablespoons)
  • Balsamic vinegar (2 tablespoons)
  • Garlic, minced (2 cloves)
  • Fresh basil, chopped (a handful)
  • Salt and pepper to taste
  • Wooden skewers, soaked in water for 30 minutes

Method

  1. Wash and chop the veggies into bitesized pieces.
  2. To create the marinade, mix together olive oil, balsamic vinegar, minced garlic, chopped basil, salt, and pepper in a bowl.
  3. Toss the veggies in the marinade, ensuring they're all nicely coated. Let them soak up the goodness for at least 15 minutes.
  4. Add the marinated veggies to the soaked skewers, alternating the colours and types for a vibrant look.
  5. Preheat your grill to medium-high heat.
  6. Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally. Grill until the veggies are tender and slightly charred.
  7. Drizzle any remaining marinade over the top for an extra flavour kick, and garnish with extra fresh basil or a squeeze of lemon for that final touch.
