Garden to Glass Recipe: Fresh Pineapple Mojito

Juicy pineapple, zesty lime, and minty freshness make this cocktail a perfect sip for sunny days. This delicious drink can be enjoyed as a mocktail - just leave out the rum!
What You'll Need
- 60mL white ru,
- 1/2 cup fresh pineapple chunks
- 15mL freshly squeezed lime juice
- 6-8 fresh mint leaves
- 2 tsp sugar
- Ice cubes
- Soda Water
- Pineapple slice and mint sprig for garnish
Method
In a cocktail shaker, add the fresh pineapple chunks, mint leaves, and sugar. Muddle everything well until the pineapple is crushed and juicy, releasing all the flavours. Add the lime juice and white rum to the shaker, then fill with ice and shake well until everything is nicely chilled. Strain the mixture into a tall glass filled with ice. Top up with soda water and give it a gentle stir. Garnish with a slice of fresh pineapple and a mint sprig.
Kings Top Tip
When harvesting pineapples, wait until the fruit is fully ripe - you'll be able to smell them once ready. Twist gently or cut with a small section of the stem attached to avoid damaging the plant.
