Banoffee Chia Pudding

Ingredients
2 cup Coconut Cream
1 cup Chia Seeds
1 tsp Vanilla Extract
1 tsp Ground Cinnamon
2 cups Black Coffee
2 tbsp Cocoa Powder
4 tsp Maple Syrup
2 small Ripe Bananas, mashed
8 tbsp Natural Yoghurt
4 tbsp Sliced Almonds
Extra banana slice for topping
Method
- Place coconut cream, chia seeds, vanilla, cinnamon, coffee, cocoa, maple syrup and banana in a bowl and stir well to combine.
- Put bowl in fridge and leave overnight.
- When ready to serve, divide chia mixture between eight small glasses.
- Top with yoghurt and sprinkle with, almonds and sliced bananas.
